This recipe for Poor Man's Pudding is an old family tradition made at the holidays. You see the poor in England couldn't afford fruits to make puddings, like plum pudding, so they made this bread variety of pudding, sliced it and ate it with gravy. Delicious, and the left over is good sliced and fried with gravy.
Mix together: 1 cup beef suet 4 cups + flour 1 tsp. salt 1 tsp. sugar 5 tsp. baking powder
Mix and moisten with milk, just enough for a stiff ball.
Use a cloth (I make mine out of a sheet 3 ft. square), moisten the middle of it, and spread a little flour on it. Put stiff ball on floured part. Tie up ends leaving space for batter to expand. Place in a blancher of boiling water and boil 1 1/2 to 2 hours. Be careful getting it out.
Slice and serve with gravy. This is real poor man's pudding. |
